Whether you’re a seasoned professional or just starting your specialty coffee journey, Cimbali Group’s Ermes Dual promises precision, versatility, and reliability in every cup.

As coffee culture continues to evolve, precision and versatility have become essential for both enthusiasts and professional baristas alike. Enter Ermes Dual, the new dual-use grinder from Casadio, the brand with deep-rooted expertise in grinding solutions and part of the Cimbali Group. Blending cutting-edge technology, sleek design, and artisanal flair, Ermes Dual is engineered with user experience at its core.

Designed for modern cafés and coffee bars that value both performance and aesthetics, Ermes Dual lives up to its name by delivering outstanding results for both espresso and filter extractions, with the same level of precision, speed, and ease. Its versatility lies in its ability to complement any traditional coffee machine, as well as brewing stations that do not require an espresso machine. Crafted for baristas who think like brewers, it seamlessly switches between single shot and on-demand modes, adapting effortlessly to a variety of service formats. Whether moving from a tight espresso profile to a Chemex or V60 setting, the transition is fast and intuitive thanks to its advanced distance detection system, which measures burr separation in microns. With real-time micron readout and memory for up to six recipes, baristas can dial in with exacting accuracy and recall their preferred settings with total consistency, ensuring every brew starts with the perfect grind.

Usability takes centre stage with this grinder; it features a vibrant 2.5” full-colour TFT display, making navigation intuitive and even enjoyable. The clean interface allows baristas to monitor grind distance, adjust parameters, and store profiles with just a few taps. The design’s simplicity and clarity make the grinder not only efficient but also a pleasure to use in a busy café environment. Whether adjusting grind size or recalling a saved recipe, the interface keeps everything in view and easily accessible.

First unveiled at the London Coffee Festival in May 2025, the Ermes Dual also boasts impressive performance. It is equipped with vertical 75mm steel burrs and a low retention grinding chamber, ensuring consistency and clarity in every dose. With an output of up to 3 grams per second, it’s perfectly suited for high-demand coffee bars. The hands-free portafilter fork is designed to accommodate portafilters from all major manufacturers, adding versatility to the grinder’s daily use. A 550g hopper and a full aluminium body available in black or white complete a package that combines durability with sleek, modern aesthetics.

The grinder’s form factor was developed by Christopher Flechtner, the famous designer behind Slayer’s iconic espresso machines. The Ermes Dual’s modern innovation is paired with tactile materials like visible screws and a see-through bean duct, offering a hands-on, human-centered design. This combination of form and function is perfect for coffee bars that care about both aesthetic appeal and mechanical performance.

At the heart of Ermes Dual’s performance is the burr set. The shape, material, and coating of the burrs directly influence particle size and consistency; key factors in extracting the full potential of every bean. Ermes Dual’s burrs are the result of extensive research and are optimised for multipurpose use: from espresso’s fine, uniformed grind to the coarser, more open profile needed for filter methods. This flexibility makes the grinder an asset in any café environment, allowing baristas to shift between brew styles without compromising cup quality. Whether the goal is to accentuate the fruity acidity of a light roast or the syrupy depth of a darker blend, Ermes Dual delivers clarity, precision and repeatability.

In 2019, Cimbali Group strengthened its grinder capabilities by acquiring Keber, a burr specialist with over 30 years of experience. With an in-house production facility in Venice, Keber designs tailor-made burrs using advanced alloys and coatings to optimise durability and flavour outcomes. This acquisition allowed the Group to refine its understanding of the grinding process, making the Ermes Dual an even more precise and reliable product. With Ermes Dual, Cimbali Group brings its expertise into a new hybrid segment, blending craft and commercial use with ease. It’s the ideal solution for coffee bars that seek versatility without sacrificing quality or consistency.

Sustainability is a key component of Ermes Dual’s design; by 2025, Cimbali Group will convert all grinder hoppers to 100% recyclable plastic as part of its broader commitment to responsible manufacturing. This approach ensures that the grinder not only performs well but also aligns with the Group’s environmental values. With the launch of this new grinder, Cimbali Group continues to shape the future of grinding; where every micron matters, and every detail, from burr to body, is designed for those who care about great coffee. Whether you’re a seasoned pro or just starting your specialty coffee journey, the Ermes Dual promises precision, versatility, and reliability in every cup.
