In Ermes Dual, Cimbali Group utilises decades of grinding expertise and sets a new standard for precision, versatility and design
As expectations for coffee quality continue to rise, the tools behind the coffee shop matter more than ever. That’s why Casadio, one of the four brands of Cimbali Group, chose The London Coffee Festival 2025 to unveil its latest innovation: the Ermes Dual grinder. Designed for modern cafés and multi-method brew bars, Ermes Dual delivers a rare combination of precision, versatility, and user-first design.
At the core of its appeal is a dual-use functionality that makes switching between espresso and filter methods seamless. Thanks to an advanced distance detection system, the grinder reads burr separation in real-time, in microns, allowing baristas to move between brew styles while maintaining consistency. Up to six grind profiles can be saved and recalled instantly, reducing guesswork and ensuring a perfect start to every cup.
Ermes Dual also shines in usability. A vibrant 2.5” TFT colour display provides intuitive control, helping users monitor grind settings and make on-the-fly adjustments. The interface is clean and responsive, designed to keep pace with the demands of a busy service. Whether recalling a saved recipe or fine-tuning the grind, baristas stay fully in control.
Performance is equally strong. With vertical 75mm steel burrs, a low-retention chamber, and a 3g/sec output, Ermes Dual is ready for mid/high-volume environments. A hands-free portafilter fork fits all major designs, and the 550g hopper is soon to be made entirely from recyclable plastic. The aluminium body, available in black or white, brings durability and a refined aesthetic to any coffee shop setup.

Design-wise, the Ermes Dual was developed in partnership with Christopher Flechtner, the industrial designer behind Slayer’s iconic espresso machines. The result is a grinder that feels as good as it looks: tactile surfaces, exposed screws, and a transparent bean duct make the grinder visually expressive and unmistakably barista centric.
Behind the scenes, much of the grinder’s power comes from its burrs. Developed with Keber, the specialist acquired by Cimbali Group in 2019, these burrs are engineered for multipurpose use, with shape designed to maximise flavour clarity across grind profiles and eliminate the bitter taste. Whether dialling in for a syrupy espresso or a light-bodied pour-over, the results are consistent, clean, and repeatable.
In Ermes Dual, Cimbali Group brings decades of grinding expertise into a new hybrid segment, where craft coffee meets commercial needs.
