Today we’re continuing our series on the business of coffee roasting and exploring the world of green coffee supply.

We'll speak with Jordan Hooper, Head of Green Coffee Trading, Sucafina and Line Cosmidis, Head of Specialty Sales, Falcon Coffees, to learn more about the green coffee supply chain, the role of the trader and how this has evolved in the digital era.

We'll also speak with John Gibson, Head Roaster, La Cabra, about his approach to direct sourcing and why building relationships at origin is so important to the business.

Jordan Hooper began his coffee career at the end a two-year volunteer stint in Nicaragua. Hooper transitioned from the managing director of Sucafina Americas, overseeing imports into North America and sourcing from Spanish-speaking Americas, to his new role as Head of Green Trading for Sucafina.

Head of Specialty Sales, Falcon Coffees

Line Cosmidis graduated as an agronomy engineer and started her career in coffee at origin, in Latin America (Venezuela and Peru) before working for a green coffee exporter in Tanzania. Cosmidis joined the Specialty team at Falcon Coffees in 2017 and heads the sales for the department. 
 
John Gibson

John Gibson

Head Roaster, La Cabra

John Gibson is the Head Roaster at La Cabra – a Danish specialty coffee roaster and bakery chain founded in 2012 with outlets in Denmark, New York and Oman. Gibson has worked in the coffee industry for over 10 years and holds Master of Engineering from The University of Edinburgh.
